Ingredients

Biscuits

  • 2 cup All-Purpose Flour
  • 1 tbsp Baking Powder
  • 1/4 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 1 stick Unsalted Butter
  • 3/4 cup Buttermilk
  • 1/2 cup Green Onions

Gravy

  • 1 pound Chorizo Sausage
  • 1/4 cup All-Purpose Flour
  • 2 1/2 cups Whole Milk
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

Make the Biscuits

  • Set your oven to 400°F (200°C).
  • In a large bowl, whisk together 2 cups flour, 1 tbsp baking powder, 1/4 tsp baking soda, 1/2 tsp salt, and 1/2 tsp black pepper until well combined.
  • Add the shredded cold butter to the dry mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  • Make a well in the center and pour in 3/4 cup buttermilk. Gently fold in 1/2 cup chopped green onions if using. Mix until just combined to form a dough.
  • Turn the dough onto a floured surface and gently knead it 3-4 times. Pat or roll out the dough to about 1-inch thickness and cut into rounds using a biscuit cutter.
  • Place the biscuits on a baking sheet, lightly brush the tops with additional buttermilk, and bake for 12-15 minutes until golden brown.

Cook the Chorizo

  • In a large skillet over medium heat, cook 1 lb chorizo until fully browned and crumbly, about 10-15 minutes. Drain excess fat if necessary.

Make the Gravy

  • Sprinkle 1/4 cup flour over the cooked chorizo in the skillet. Stir well and cook for 2-3 minutes to eliminate the raw flour taste.
  • Gradually pour in 2.5 cups whole milk, stirring continuously to prevent lumps. Bring to a simmer.
  • Add 1/2 tsp salt and 1/2 tsp black pepper. Cook until the gravy thickens to your desired consistency, stirring frequently.

Assemble

  • Split the warm biscuits in half and place them on plates. Generously spoon the chorizo gravy over each biscuit.
  • Sprinkle with extra green onions or your favorite herbs for added flavor and color.
