Instructions
Make the Biscuits
Set your oven to 400°F (200°C).
In a large bowl, whisk together 2 cups flour, 1 tbsp baking powder, 1/4 tsp baking soda, 1/2 tsp salt, and 1/2 tsp black pepper until well combined.
Add the shredded cold butter to the dry mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
Make a well in the center and pour in 3/4 cup buttermilk. Gently fold in 1/2 cup chopped green onions if using. Mix until just combined to form a dough.
Turn the dough onto a floured surface and gently knead it 3-4 times. Pat or roll out the dough to about 1-inch thickness and cut into rounds using a biscuit cutter.
Place the biscuits on a baking sheet, lightly brush the tops with additional buttermilk, and bake for 12-15 minutes until golden brown.
Cook the Chorizo
In a large skillet over medium heat, cook 1 lb chorizo until fully browned and crumbly, about 10-15 minutes. Drain excess fat if necessary.
Make the Gravy
Sprinkle 1/4 cup flour over the cooked chorizo in the skillet. Stir well and cook for 2-3 minutes to eliminate the raw flour taste.
Gradually pour in 2.5 cups whole milk, stirring continuously to prevent lumps. Bring to a simmer.
Add 1/2 tsp salt and 1/2 tsp black pepper. Cook until the gravy thickens to your desired consistency, stirring frequently.
Assemble
Split the warm biscuits in half and place them on plates. Generously spoon the chorizo gravy over each biscuit.
Sprinkle with extra green onions or your favorite herbs for added flavor and color.
