Ingredients

Chicken Frito Pie

  • 1 yellow onion
  • 2 Roma Tomatoes
  • 3 cloves garlic

Refrigerated

  • 6 oz Cheddar Cheese
  • 6 oz Monterrey Jack Cheese

Grocery

  • 1 can corn
  • 1 can black beans
  • 1 can green chilies

Meat

  • 6 Boneless Chicken Thighs

Spices

  • 2 tsp Trade Joes Elote Seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika

Instructions

Season & Cook Chicken

  • Season 6-8 boneless chicken thighs with 1 tsp salt, 1 tsp pepper, 1 tsp garlic powder, 1 tsp onion powder, and 1 tsp paprika.
  • Let sit for 10 minutes.
  • Cook in a cast iron skillet with vegetable oil, 4 minutes per side.
  • Let rest for 5 minutes, then cut into bite-size pieces.

Prep & Cook Produce With Canned Vegetables

  • Dice 1 yellow onion, 1-2 Roma tomatoes, and mince 2-3 garlic cloves.
  • Sauté the onion and garlic in the skillet with 1 tsp butter and a little olive oil for a few minutes.
  • Add the tomatoes and Trader Joe’s Elote Seasoning, cooking for another 3 minutes.
  • Add the tomatoes and Trader Joe’s Elote Seasoning, cooking for another 3 minutes.
  • Stir in 1 can of corn, 1 can of black beans, and 1 can of green chilies. Simmer for 15 minutes, then add the bite-size chicken pieces.

Shred Your Cheese

  • Shred 6 oz of cheddar cheese and 6 oz of Monterey Jack cheese. Preheat the oven to 350°F.

Assemble & Bake

  • Layer Fritos on the bottom of the skillet to form the crust.
  • Add the chicken and vegetable mixture as the second layer.
  • Sprinkle the shredded cheese as the third layer.
  • Top with another layer of Fritos. Bake at 350°F for 10 minutes until the cheese is melted.

  • Scoop out the pie from the skillet onto a plate. Garnish with green onions if desired.
