Cut the sweet onion into rings, then slice them in half.
Shred Your Cheese
Shred 8 oz of Gruyere cheese.
Caramelize Onions
Melt 1 tablespoon of unsalted butter in a skillet over medium heat.
Add the sliced onions and cook, stirring occasionally, until they are caramelized (about 10-15 minutes).
Add 2 tbsp Worcestershire sauce, 1 tsp thyme, 1/2 tsp salt, and 1/2 tsp black pepper to the onions. Stir to combine
Assemble & Fry Bread
Butter one side of each slice of sourdough bread.
Place the bread slices butter side down. Add shredded Gruyere cheese to both sides.
Top one side with caramelized onions, then press the slices together to form a sandwich.
Add a tsp of butter to the skillet and fry the sandwich over medium-low heat for about 3 minutes on each side or until golden brown.
Cover the pan while grilling to ensure the cheese melts evenly.
